So one of my friends is doing a 30 day blog challenge during the month of November and I am going to join her.  I am not going to do the exact same thing that she is doing, but I will be blogging about something every day during the month of November.  I am going to use this as my outlet to get a break from all the craziness that is my life these days.  Here is the list of what I will be blogging about each day.

In the blink of an eye

Last Monday started off as a pretty normal day.  I spent Sunday night at my parents house, after a wonderful weekend in Bowling Green, before heading back to Madison County for meetings and stuff for work.  Monday morning I woke up, got dressed, loaded up my car, and Baylie and I were on our way to Berea.  Little did we know that in minutes we would no longer be on our way to Berea.

I was 5 minutes from my parents house when all of a sudden I was hanging from my seat belt with the passenger side of my car laying on the creek rock below.  I managed to unbuckle myself  and climb out my rear window that had completely fallen out.  Before I had managed to get out of my car, a couple guys were there to help me out.  I was completely confused and had no idea what was going on.  Once I was out of the car, I realized that Baylie was missing.  We looked and called for her, but she was no where to be found.  After I got out of my car, I managed to call my mom and tell her that I had been in a wreck.  Most everything surrounding that time is a blur.  Once the guys who had stopped to help and I had climbed up to the road, the ems and police were arriving on scene.  I was completely shaken up, and trying to figure out what had happened.

The EMS looked me over and all I had was a cut on my foot with glass embedded into it, thankfully.  They kept saying how surprised they were and normally pulling onto a scene like this they expected severe injuries or death.  It was scary hearing them say that, but made me thank God even more.

The rest of the day was a blur, my mom took me to the hospital where they xrayed my foot, removed the glass, and put me on some muscle relaxers.  Then we went to the wrecker place to get my stuff out of the car, before heading home.  I slept most of the rest of the day away.

It is crazy how in the blink of an eye, my entire day and life changed.  It’s almost been a week and I have no idea how to truly put into words how I feel and how I felt.  I am so thankful to be alive, especially when everyone says I shouldn’t have made it out of my car walking.  The Lord has a plan for my life and I know he isn’t finished with me yet.

Chili & Cornbread

So since my accident on Monday (to be posted about soon) I have been at my parents house recovering and waiting on insurance stuff before heading back to work.  I have had lots of free time with  no car and all and in that free time I have been looking at lots of different recipes that I want to try in the future.  So today I decided to try out a couple, while in turn making my parents lunch.  Here are the recipes I tried today – White Chili & Skillet Cornbread.  I took basic recipes and made them my own.  I wish I had taken pictures or that I could let you try a bite, because they were oh so yummy!


White Bean Chili


2 containers Chicken Broth

2 cans Cannellini Beans – drained

6 tbsp butter

1-1/4 cup white onion – diced

2 lbs boneless, skinless chicken breasts, grilled & shredded

2 tbsp ground cumin

2 tbsp dried oregano

3 tsp ground black pepper

dash crushed red pepper


3 cans chilies

2 tbsp minced garlic


-Place your beans and broth into a large sauce pan and bring to a boil over high heat.

-In a medium saucepan, heat the butter over medium heat.  Add your garlic, onion & chilies and saute for 5 minutes.

-Add chili mixture to beans along with your spices.  Lower heat to medium and cook, stirring occasionally for about an hour.

Serve warm with sour cream and shredded cheese if desired.


Skillet Cornbread


2 boxes Jiffy corn muffin mix

1 egg

1 cup sour cream

1 can cream corn

3 tbsp butter


-Place butter in cast iron skillet and place in oven while preheating to 375 degrees.

-Meanwhile, mix all other ingredients in a medium sized bowl.

-When oven is ready, remove skillet and add cornbread mixture on top of melted butter.  Replace pan to oven and bake for 30-35 minutes.

Serve warm.

Goes great with white chili, regular chili, soup beans, or just warm with butter.

Geaux Tops!

This weekend was Homecoming at WKU my alma mater.  This was my first homecoming as an alum and it was a great weekend of getting to see friends and hang out on my favorite college campus.

Not only was it worth going to see friends, but WKU won their first home football game since my sophomore year of college in 2008.  It was so awesome to see them beat LLU!  What was even better was the students storming the field after the win.  It was a great weekend and made me miss school, friends, and BG more than I already did.

Getting Older

Well, I am officially another year older. Not that it really makes me feel any different than I did.

I spent my birthday weekend at home with my family.

Friday night, my mom and I went to a football game at my high school to watch the band perform at half-time, which was a lot of fun.  I miss my band days, but I am also glad to not be in high school anymore.

Saturday, mom, Carol and I went to the Arts and Crafts Fair for a bit and then mom and I headed to her church to work at their annual turkey supper.  It was crazy, but a lot of fun, not to mention lots of yummy food!

Sunday, my actual birthday, I went back to the Arts and Crafts Fair and spent time with my cousins, Holly, Britini, & Carolyn.  We had lots of fun and enjoyed the time together.  Not to mention some yummy white chili!  After hanging out with my cousins, I drove back to Berea to celebrate my birthday with my family there.  They made me dinner and cake.  It was lots of fun!

All in all it was a great birthday and I really enjoyed getting to spend it with so many different people.

It’s official…

I am a horrible blogger!  At least I have been these last two months.

When I moved to Berea I had every intention of blogging at least once a week about anything and everything.  That has not happened, but I am hoping to get caught up on things soon.  I want my life to be a little more organized and I want to make sure that my time management is getting better.  I get everything done I have to do, but I want to make sure to get in everything I have on my to do list and have time for me as well.  So I am officially putting blogging on my calendar as a Thursday event.  Hopefully that will help me stay on track.
